GENERAL INFORMATION
It was established with the regulation of Kayseri University Food Studies Application and Research Center published in the Official Gazette dated March 10, 2020 and numbered 30845. Our center is currently serving in the newly built Safiye Çıkrıkçıoğlu Food Studies Application and Research Center building. Since there is no academic and administrative staff of our center, the personnel needs of the unit are met by the personnel assigned by the Rector in accordance with Article 13 of the Law No. 2547 according to Article 15 of the Regulation of our Center. A total of 7 academicians, including 1 Center Director, 1 Deputy Center Director and 5 academic staff, work within our unit. At the same time, there are 14 administrative staff assigned to our unit. In the dairy processing unit of our center, raw milk is first subjected to different heat treatments according to the product to be processed in the pasteurizer unit in the pre-processing section after the necessary analyzes are made to determine its quality. It is then sent to the relevant dairy unit through pipes in a closed system. In the dairy unit, there are white and brined cheese production department, cheddar and çeçil cheese production department, butter production department, ice cream production department, pasteurized milk production department and yogurt production department. In addition to these, there are 2 cold storage rooms, 1 incubation room and 3 warehouses in the milk unit. In our center, an average of 2 tons of milk is processed daily and 17 different dairy products are produced. There are also 2 cold storage and fermentation rooms. In our Bakery Products unit, there is a bread production department, fermentation room, cold storage and 2 warehouses. In our bakery unit, we are currently producing whole wheat bread whose sourdough is produced by us. In this unit, it is planned to produce new products within the scope of student applications and product development. In the specialty foods unit, products such as breakfast sauces, vinegar, breakfast spreadable chocolate, raw meatballs, etc. are produced. In time, the production of different products within the scope of special foods is among our activity plans. In our laboratory department, physicochemical and microbiological analyzes of our raw materials and products are planned to be carried out routinely. Our activity plans include further improving the laboratory conditions and providing services to other public institutions and the private sector in this field. Within our center, 5 product presentation and sales centers are actively serving. Our sales centers are located in Kayseri University 15 July Campus and our other branches are located in Talas Anayurt, Talas TOKİ, Melikgazi-Düvenönü and Bahçelievler Neighborhood. It is among our activity plans to increase the number of our product presentation and sales application centers in a short time and to serve the whole of Kayseri. Kayseri University
